Turkey Salad
In this recipe, lean ground turkey replaces higher fat ground beef, and fresh
bread crumbs lend some extra moisture. Your family will rave about this
great tasting meatloaf that is lower in fat and sodium but big on flavor!
Yield: 8 servings
Ingredients:
- 1/4 cup light mayonnaise
- 2 tbsp. honey
- 1/4 tsp. ginger
- 1/2 cup diced celery
- 2 cups chopped turkey
- 11 oz. can mandarin oranges, drained
- 1 cup chopped apple
- 1 cup grape halves
- 8 oz. pineapple chunks, drained
DIrections:
- In a bowl, combine mayonnaise, honey and ginger, and mix well.
- Add remaining ingredients and mix lightly.
- Chill or serve.
